Calling all RV cooks. You know what I mean when I say hot dogs, burgers, repeat. Tired of the “camping” food and ready to start giving some love to your travel trailer’s kitchen? Boy oh boy, we have some winning recipes for you! Here are just a few favorite RV meals that are quick, easy and full of flavor.



In-A-Pinch Pizza

Say hello to homemade Italian food and goodbye to hot dog stew. This pizza might be a little adventurous for the OCD cooks that MUST follow the recipe to a tee, but it will be worth it! This recipe can be tweaked and was created by trying to get rid of leftovers in a yummy manner.


Ingredients:

  • Dry-packaged mini pizza crusts (or the ingredients to make homemade dough)
  • 1 Tbsp pesto spread or tomato sauce
  • 2 Tbsp grated cheese (Use whatever cheese you have)
  • 1 Tsp Italian seasoning
  • 2 slices of any meat (chicken, beef, pork… hot dogs)
  • ½ sliced pepper (or any vegetables of your choice)


Instructions:

If you have decided to make your own crust because your middle name is chief, go ahead and roll and shape the crust. Spread the pesto or tomato sauce on the pizza crust and layer the cheese and other ingredients. Sprinkle the seasoning on top and pop it in the oven for the suggested time on the pizza crust package (12-15 minutes should be good for pre-cooked crust). WA LA! You succeeded in cleaning our the leftovers and making a different meal! 

Chicken and Veggie Foil Pack

Now this dinner can be as creative or as plain as you want it to be! Typically when we are having this for dinner, we lay out ALL the seasonings, dressings, sides and meat! You just start with your foil and pack it with anything you want. This makes for a fun dinner because everyone can come out with completely different dishes!


Ingredients:

  • Foil (Tear off a large piece of foil for each person eating dinner with you)
  • Meat of choice (Our family typically does chicken, but you can change it up)
  • Potatoes
  • All sorts of vegetables
  • All the dressings you have in your cabinet
  • All the seasonings
  • Sharpie (Write each person’s first initial on their foil so you know when it comes time to serve them)


Instructions:

Each person gets a large piece of foil. Make an assembly line for assembling dinner (Meat, vegetables, potatoes, sauces and seasonings). Let each person make their unique foil plate with a handful of this and a handful of that. Make sure to add some sort of sauce on top of your meat and vegetables or the end result might be a little dry. Top it off with seasonings and wrap it up like a taco. Label each “foil taco” and place them on the grill. Cook for about 15 minutes on one side and 7-8 minutes on the other. Before you completely turn off the grill, make sure each piece of chicken or meat is done. Dump the flavorful goodness into a bowl or just place it on a plate and open the foil pack.



Salsa Chicken

Why’d the chicken cross the road? He was craving some chips and salsa! If you are like me, Mexican food is practically in your blood and it should be considered unhealthy to go a week or two without it. This recipe is so easy, you’ll feel like you’re cheating. Make sure you pack your slow cooker or Instant Pot for this dinner recipe!


Ingredients:

  • Chicken (any cut will do)
  • Large can of your favorite salsa (Mine is Herdez!)
  • Crock-pot liners (This will save you from having to wash your crock-pot outside if you don’t have a big sink)


Instructions:

Insert the crock-pot liner, throw in your chicken and dump the large can of salsa on top of the chicken. Turn the crock-pot on low and cook for 3 hours! Alongside this dish, you can add Mexican rice and beans or serve it next to steamed veggies. Once you begin taking the chicken out of the crock-pot, the chicken will start to fall apart. You can shred the chicken in the slow cooker or just serve as is. 


Campfire Nachos

This is nacho average RV meal! This delicious recipe is quick, easy and cheaper than a trip to the nearby Mexican Restaurant. Let’s dig in!


Ingredients:

  • One foil pan
  • Foil to cover the foil pan
  • A bag of your favorite tortilla chips
  • Taco meat (Turkey meat is a great substitution)
  • Cheese
  • 2 cans black beans (or refried)
  • 1 onion
  • 2 tomatoes
  • 1 avocado
  • 1 jalapeno (if you like to bring the heat)
  • 1 tub of sour cream


Instructions:

Season the meat with your choice of seasonings. Place a layer of chips in the bottom of the foil pan and begin layering meat, cheese and toppings. Be sure to drain any liquid before adding it to the nacho pan. Keep layering until the pan is filled. Place the foil on top of the pan. Place over the campfire or on the grill. Cook for around 23-30 minutes until the vegetables are soft and the taco meat is completely cooked. Pull the nachos off the campfire or the grill and enjoy. No need to get out all the utensils and plates, make it a messy and memorable dinner! Just add the sour cream on top and enjoy your dinner!
